My entire family is Scandinavian, so I grew up with a lot of Finnish traditions and delicious food! One of my favorite recipes is for Finnish Oven Pancakes, we call it Pannukakku, try and pronounce that! 

Anyways, this is such an easy recipe that I love making for a quick dinner or a Saturday morning brunch! And the great thing about it is that you probably already have all of the ingredients! 

Ingredients

3 eggs
1 tsp salt
1/4 c sugar
2 c milk
1 c flour
1 tsp vanilla
lemon zest (optional)

Directions

Preheat oven to 375 degrees.

Mix all ingredients together well. I combine them in order with a hand beater or a whisk if I'm wanting a good arm workout.

Pour batter into a greased 9" x 13" pan and bake for 30 minutes. 

Serve with a little bit of butter, fresh fruit, maple syrup, whipped cream, or powdered sugar.

Note: The pancakes will puff up with large air bubbles. I like to bake it until the top turns golden brown.
