The Best Post Workout Wrap
Michael and I have been training for a marathon for a couple of months now, so that means Saturday is our long run day! So we're always looking for a healthy easy lunch that we can eat after running.
We have our fingers crossed that one day Greenville will get a Black Bean Company! If you're ever in Charleston you simply must go to the Black Bean! They have the most amazing wraps that are absolutely perfect for a post workout lunch.
Since King Street is a little too far from the Swamp Rabbit, I've been making wraps inspired by BBC and let me tell you, they are delicious!
POST WORKOUT WRAP
Ingredients:
Chicken
Bay Leaves
Salt and Pepper
Wraps ( I like whole wheat, Wellness Wraps from Publix)
Jasmine Rice
Carrots
Lettuce
Tomato
Avocado
Onion
Jalapeno
Cheddar Cheese
Avocado Ranch Dressing
Directions:
Cook chicken on low in a crockpot for four hours with 2 bay leaves and salt and pepper.
Chop all veggies and prepare the rice.
Heat wraps on a skillet just to warm.
Assemble with chicken, rice, veggies, shredded cheese, and dressing to taste.
