Since we've been married, Michael and I have been trying to develop some really healthy lifestyle habits! We're training for a marathon (that's next weekend - prayers appreciated!) making green smoothies, drinking more water, and trying to get lots of sleep. One thing that we have not been willing to give up is sweets! We like to have a really yummy dessert every night. 

Normally we have opted for an ice cream sundae of some sort... always delicious! But, lately we have been trading our hot fudge for granola and açaí!

We haven't quite gotten to the meal replacement stage yet but these açai bowls are quickly becoming one of our favorite desserts! 

Açai Bowl

Ingredients
Frozen Açai Packets (I use Sambazon pure unsweetened acai from Earth Fare) 
1 Banana
1/2 c Frozen Pineapple 
1/4 c Almond Milk 
2 t. Honey 

Toppings: 
Yogurt (I used Activia Strawberry Yogurt) 
Strawberries 
Bananas
Blueberries 
Blackberries 
Kiwi
Granola 
Coconut (lightly toasted) 

Directions
Place açai packet under hot water for about 10 seconds so you can break it up into smaller pieces. Place in blender and pulse/blend açai, frozen pineapple, banana, almond milk, and honey to a thick and smooth consistency. Spoon into bowls and place in freezer for a minimum of 10-15 minutes. (You can place in an air tight container and freeze it if you're not planning on using it right away.)

To assemble the bowl; start with a generous serving of your frozen açai, drizzle with honey and spoon a layer of yogurt on top of the açai. Add all of your favorite fruits and finish with toasted coconut and granola on top!
